47 North Bar + Bistro’s Mocktail Recipe

Many of us are taking a break from the indulgent holiday feasting and drinking, but that doesn’t mean we can’t have a little sparkle of color to sip with a meal. Have a mocktail hour with a hibiscus refresher at the 47 North Bar in downtown Bellevue’s Hilton Garden Inn. Created by lead bartender Shane Agee, this alcohol-free drink is flavored with the unique floral sweetness of hibiscus. The lovely tropical bloom lends its delicate aromatics to hot and cold beverages, and its holistic qualities are believed to encourage reduced blood pressure levels, aid digestion, and act as a source of vitamin C. It’s also a vibrantly colored drink to brighten a gray winter day, served in either a champagne flute or on the rocks. Located at 10777 N.E. 19th St., Bellevue, open daily.

1/2 oz. hibiscus orange syrup

1 oz. fresh-squeezed lime juice

½ oz. simple syrup (1:1 ratio of sugar or natural sweetener to water)

Citrus soda or plain seltzer to top

Sugar to coat glass rim (can replace with Stevia or other natural sweetener)

Orange wheel to garnish

Select a champagne flute or old-fashioned glass to serve the drink, and moisten and coat the rim with sugar or sweetener of your choice.

In a cocktail shaker with ice, mix the hibiscus and simple syrup with lime juice until combined and chilled, then strain into the sugared glass. Top with soda to finish,
