Executive chef Derek Simcik and executive pastry chef Kate Sigel want you to join the Conversation — that’s the name of their new all-day restaurant at Thompson Seattle, and the menu is as interesting as the name of their restaurant. According to sources, Conversation provides “a sensory experience through culinary offerings in a setting that fosters conversation and human interaction” and is inspired by Simcik’s travels as a kid and the food he savored with his family while abroad. Conversation is the fresh new kid on the block following the closure of Scout in January.
Conversation opened May 8, 2019. It is open from 7am to 10pm Monday through Friday and 8am to 10pm on Saturday and Sunday.
