The widespread celebration of the Lunar New Year and popularity of Asian-style dumplings have created a craving for knowledge, so that home cooks can recreate dim sum favorites in their own kitchen. Personal chef and founder of Cooking Dolls, Olive Huang, is a connoisseur of world cuisine and a teacher at heart, believing that fine dining does not have to be exclusive to restaurants, and a beautifully prepared meal can be made at home. Along with catering and meal plan services, Olive offers a hands-on dim sum class, where techniques to create Chinese-style dumplings (including the coveted xiao long bao, aka soup dumplings), are shared in a small, intimate gathering, right in your own kitchen. All levels of experience are welcomed; participants learn to craft three to four dishes; the menu can be modified to suit dietary needs or personal tastes; and classes tend to run two to three hours. To whet your appetite, Olive shares her recipe for a flavorful dipping sauce that pairs deliciously with any dumpling:
1/2 cup soy sauce
1/2 cup rice vinegar
1 tablespoon chopped garlic
1 tablespoon peeled and grated fresh ginger
1/2 tablespoon toasted sesame oil
2 tablespoons honey or brown sugar
Hot chili oil (optional)
Place all ingredients in a bowl, and whisk to combine. Pour into small bowls for dipping.
