Marathon Meals from Chef Bonnie McPike

Nutrition has always been the hallmark of personal chef Bonnie McPike’s handmade meals, but during the next three months, the chef and avid runner is cooking up a meal delivery service geared specifically for those running the Seattle Marathon on Nov. 25. McPike’s Marathon Meals program begins Sept. 10, providing 11 weeks of weekday lunches and snacks, plus one week of recovery meals following the race.

McPike has run 10 half marathons, beginning at age 17, but this will be her first full marathon. For this program, she consulted with dieticians to develop meals targeted for the needs of long-distance running. A sample lunch consists of roasted chicken, quinoa, greens, slivered almonds, and a flavorful dressing that sticks to a 30 percent lean protein, 30 percent healthy fats, and 40 percent clean carbohydrate model. Snacks range from sweet-salty almond butter-date energy bites and vegetable crudité with green goddess dip, to bistro boxes with homemade crackers and organic cheeses.

“Runners are my tribe,” said McPike. “But running is such a solitary endeavor. I wanted to figure out a way to help people and bring them together while they’re training.”

McPike decided to target lunches as a way to supplement her clients overall nutritional needs, reasoning that breakfast and dinner are usually meals spent with partners and family, whereas lunches tend to be consumed when people are busy with work or commitments. Nearly all of the ingredients are organic and locally sourced. McPike does not use any refined sugars, GMO products, or premanufactured ingredients. Everything is made in small batches. As the race gets closer and the training includes more miles, she plans to increase the overall amount of carbohydrates to compensate for the additional spent energy.

For clients registering for the complete program ($250/week), McPike includes free delivery twice per week. The meals can be delivered to home or office within a 10-mile radius of downtown Seattle, including eastside locations in Bellevue and Kirkland. For those living outside the delivery zone, alternative pick-up destinations can be arranged.
