Mother’s Day Brunch at Home (or Not)

Breakfast in bed has been a traditional Mother’s Day (Sunday, May 9) treat, as well as going out to brunch to celebrate the Greatest Mom in the World. Woodblock’s Goat Cheese & Spinach Quiche Recipe

(Makes enough for 2)


  • 1 9-inch pie shell, partially baked according to package instructions
  • 4 tablespoons caramelized onions
  • ¼ cup goat cheese
  • ¼ cup blanched spinach


  • 5 eggs, beaten
  • 3 cups of cream
  • 1½ teaspoon salt
  • 4 grates of nutmeg

Preheat oven to 350 degrees. In your par-baked pie shell, spread the caramelized onions on the bottom. Dot the goat cheese and spinach around the shell. Beat the eggs, and then stir in the remaining ingredients. Pour the custard mixture, leaving 1/4-inch from the top of the shell. Bake for 35–40 minutes or until custard is set and browned on top.
