Trendy and health-conscious Eastsiders are lapping up the poké craze sweeping the nation, and Pokéworks is ready to serve its fast, casual, healthy fare in Bellevue. The national chain opened on Bellevue Way in the Safeway retail complex during the summer, peddling its signature poké “burritos” to hungry professionals. The Shiso salmon burrito comes with freshly marinated salmon, green and sweet onion, edamame, cucumber slices, sesame seeds, and shiso, and is lightly sauced with ponzu — a type of sweet vinaigrette. The filling is wrapped in a layer of sushi rice and rolled in a seaweed wrapper for an easy nutritious lunch on the go.
