Eastsiders are sure to rejoice at the return to in-place dining at the Woodmark Resort’s Beach Café, a longtime favorite dining spot along the Kirkland waterfront at Carillon Point. Plans are underway to reopen in May, and folks should check social media feeds on Facebook and Instagram for details. During this past year of takeout-only dining, Woodmark officials have been sharing signature recipes. In honor of the reopening as well as continued happy hours at home, they hope readers will enjoy this summery Strawberry Basil Caipiroska, a vodka-based cocktail inspired by Brazil’s caipirinha.
Strawberry Basil Caipiroska
(Makes 1 cocktail)
- 2 ounces vodka
- 4 strawberries, cut into quarters
- 1 tablespoon of sugar in raw
- 1 whole lime, cut into wedges
- 2 to 3 basil leaves (reserve some sprigs for garnish)
In a heavy glass, muddle the vodka, strawberries, sugar, lime, and basil. Pour into a cocktail shaker. Add ice, and shake well to combine. Pour into a glass, and garnish with a fresh sprig of basil.
