Wildwood Spirits Company will be releasing two new whiskeys in May, with pre-orders opening in March for those wanting to get first dibs on these premiering spirits. The Professor is an Irish-style whiskey made with Washington-grown wheat and malt, aged three years in barrels that housed the award-winning Dark Door bourbon. The second whiskey originates from The Professor but is then racked into a barrel that aged both its bourbon and specialty coffee beans, so this variation will have the deepened notes of mocha and vanilla reminiscent of a toasty espresso.
