Seattle is a hub of gastronomic delights, and its international airport is starting to catch up. Upgrades to the terminals include upgrades to the dining scene, first with Floret last year and expanding with Evergreens Salad, Pallino Pastaria, Lucky Louie Fish Shack, Pei Wei Asian Kitchen, and Koi Shi Sushi Bento. With the original located on Ninth and Pike in downtown Seattle, Bambuza Vietnam Kitchen, owned by husband and wife team Daniel Nguyen and Katherine Lam, joins a family of six restaurants across the Pacific Northwest. Nguyen’s parents emigrated from Vietnam in 1975, working in paper and woolen mills in southwest Washington. His mother always dreamed of opening a restaurant, which she did in 1983. In 2003, Nguyen put his business degree to work in the family business, expanding the concept with more restaurants. Bambuza Vietnam Kitchen, located near Sea-Tac’s N Gates, serves cherished family recipes full of vibrant Vietnamese flavor made with locally sourced ingredients.
