French 75s are simple to make and are cool and refreshing for summer. But when you add a twist of fragrant and herby lavender, you have captured sunshine in a glass.
Lavender French 75
(Makes 2 cocktails)
4 ounces gin
2 tablespoons freshly squeezed lemon juice
2 tablespoons lavender simple syrup (see below)
½ cup crushed ice
1 cup prosecco or Champagne
More lemon for garnish
Lavender Simple syrup
1 bunch of food-grade lavender, stems removed (about ½ cup)
1 cup water
1 cup sugar
Make your simple syrup by bringing lavender, sugar, and water to a boil to dissolve the sugar, and then remove from heat. Cool it to room temperature, and strain through a fine mesh strainer to remove the lavender.
To make the cocktails, place gin, lemon juice, simple syrup, and ice in a cocktail shaker. Shake vigorously. Pour the Champagne into two chilled glasses. Float the contents of the shaker over the top of both cocktails. Garnish with a sprig of lavender and lemon wedge.
