Fact: There can never be too many sushi joints, too many sushi options, or too much sushi on the table. In response to Bellevue’s well-documented love of sushi, JOEY rolled out a new sushi corner on the menu, including sushi cones. Made from 10 ingredients, including a colorful soybean-based wrapper (instead of tough seaweed or rice paper), tempura shrimp, avocado, and little pops of tobiko (flying fish roe), this playful take on sushi is tasty and easy to eat. The shrimp and cucumber add a bit of crunch, and the rice and wrapper hold together bite after bite without the need to cram the entire thing into your mouth in one fell swoop. You scream; I scream; we all scream for sushi cones! It may not rhyme quite as well, but it’s delicious nonetheless.
