Each year, several of Portland’s and Seattle’s finest young chefs put their culinary skills to the test, battling to win the Pacific Northwest’s meatiest cooking competition. Wild About Game, now in its 18th year, takes place at Mt. Hood Oregon Resort, located on the slopes of Mount Hood, and features game meat sourced by Nicky USA. The event is popular among food industry circles, though it is open to the public. Past winners include Seattle’s most recent James Beard Award winner, Edouardo Jordan of Junebaby, and last year esteemed food writer Ruth Reichl served as one of the judges.
Wild About Game is both fun and educational, giving attendees an opportunity to taste a variety of game meats prepared by experts. Nicky USA, the Pacific Northwest’s favorite meat purveyor, hosts the event to thank their loyal customers, giving them a chance to showcase its restaurants. The winner of the Carter Cutlery Game Cooking Competition receives $1,000 and a custom-made chef’s knife personally made by master bladesmith Murray Carter and valued at $2,000. The People’s Choice winner will receive a Traeger Grills Pro 34 Grill package worth $1,500.
This year’s competing chef lineup includes Portland-based chefs Peter Cho of Han Oak, Chris DiMinno of Trifecta Tavern, Sarah Pliner of Aviary, and Justin Woodward of Castagna, and Seattle-based chefs Alex Barkley of Manolin, David Nichols of Rider, Derek Ronspies of Le Petit Cochon, and Aaron Willis of Ciudad Grill.
