Wildwood Spirits Co., Novus Coffee Imports Release a Bourbon Whiskey Barrel-Aged Coffee

We know bourbon and coffee pair nicely, but what about a blending of flavors that have all the luscious notes of vanilla, chocolate, and caramel, minus the alcohol?

Bothell’s Wildwood Spirits has collaborated with Seattle’s Novus Coffee Imports to develop The Dark Door, a coffee flavored with the complexity of the distillery’s whiskey of the same name. Most flavored coffees use roasted beans coated in a flavored oil, but Wildwood places Novus’ green, unroasted coffee beans into barrels previously used to age their Dark Door bourbon whiskey for several weeks to absorb its rich flavors.

With over 25 years of coffee sourcing, roasting, and blending, Novus handles the roasting process with expert care, so that the beans are able to retain notes of the whiskey barrel while developing that depth of flavor we crave in coffee.
